A few weeks ago before coming back to school I made chicken noodle soup from chicken leftover from the holidays. I made a big pot. Then canned it in pint jars so that is will be easily used through out the semester.

It came out better than expected, for the first attempt. Next time I will change a few things and it will be even better. The noodles didn’t come out too soggy but next time I will cook them even less before pressurizing the cans. Also there is a big lack of broth is some of the cans (this is because of the noodles cooking even further during the canning process) which I don’t mind because it made it a heartier soup.
